Pickles, Please!

It is no secret that the Duggars love pickles. Some even prefer pickles over candy. What is your all-time favorite food? Maybe it's pickles, or maybe you prefer a bar of melt-in-your-mouth chocolate (that's our favorite!)

And if you're interested, give Jason Duggar's homemade pickle recipe a try. He uses cucumbers from the garden that he planted himself.

Jason's Quick Pickles

Ingredients:
4 cups white vinegar
2 cups water
8 teaspoons salt
8 teaspoons pickling spice (optional)
4 large cucumber, cut into 1/4-inch slices

Directions:
1. Combine white vinegar, water, salt, and pickling spice in a small saucepan. Heat to a boil.
2. Place cucumbers in a clean, dry glass container just large enough to hold all the slices.
3. Pour boiling brine (mixture created in step 1) over cucumber slices to cover completely. If all cucumbers are not submerged, add cold water to cover.
4. Cover; refrigerate at least 1 hour.

Makes: 2 quarts

Duggars' Notes:
Pickles will keep for about 10 days (but around our house we can usually eat them in less than 10 minutes!).
You can combine these same ingredients, and rather than boil, just let it sit for a few days. You will get pickles either way, but by boiling you will have your pickles in just a few hours.

  11. @AnonymousJust remember that this is also a HUGE batch, and most people do not eat tons of pickles at a time. All pickles are pretty salty...it's how they're preserved.

  14. Are there different kinds of pickling spices? I want a kosher dill like a Clausen Dill that would be crunchy, not like one that is soft and limp ~ I hope someone has this answer ~

    Thanks

  15. what about sweet or sweet ginger pickles? what is the recipe for those kinds? My family likes both, but prefers the sweet ones. We also like sweet ginger pickles too. We buy those pickles that have cauliflower, onions, cucumbers, peppers, carrots, and such in them. THey taste good. BUt I would love to make them and save money.

  17. Just curious.. When you bring the mixture to a boil do you make the jar hot too! Or do you wait until the mixture is some what cool before pooring it on to the cucumbers!

  21. Salt isn't bad for you, that's a myth. It's too many carbohydrates that are bad for you. You need a certain amount of sodium in the blood.

  26. My pickles would have to have 'dill and garlic'...lots of garlic :)

  27. If you make fermented dill pickles they last months in the fridge since they contain live active cultures. Sea salt, water, dill, garlic, cucumbers and about a week's time and you have delicious dill pickles with live active cultures. Google fermented dill pickles for recipes. This is how dill pickles were made before vinegar. Healthier for the gut.

  31. I like when they said they could eat them in 10 minutes. I saw an episode of the show where the kids had a huge gallon jar of pickles and it emptied out pretty fast. I thought it was cute.
