Discussion Question: Duggars for Dinner

If the Duggars came to your house for a casual, family dinner, what would you prepare?

  7. I am french but live in Ohio. This is a really tasty recipe for dessert!

    Madeleine Recipe

    Ingredients:

    1 1/2 sticks unsalted butter (6 ounces)
    2 tablespoons softened unsalted butter (for greasing pan)
    3/4 cups unbleached all-purpose flour
    4 large eggs
    a pinch fine-grain sea salt
    2/3 cups sugar
    zest of one large lemon
    1 teaspoon vanilla extract
    powdered sugar

    a bit of extra flour for dusting baking pan

    Special equipment: A madeleine baking pan, regular or small

    Preheat oven to 350 degrees Fahrenheit.

    Melt the 1 1/2 sticks of butter in a small pot over medium heat until it's brown and gives off a deliciously nutty aroma, roughly 20 minutes. Strain (using a paper towel over a mesh strainer) - you want to leave the solids behind. Cool the butter to room temperature. By doing the butter first you can complete the rest of the steps while it is cooling.

    While the melted butter is cooling, use the remaining 2 tablespoons of butter to grease the madeleine molds - get in there and make sure you get in all the ridges. Dust with flour and invert the pan tapping out any excess flour. Lanha uses "cooking spray" with flour to simplify this part.

    Put the eggs with the salt in the bowl of an electric mixer with a whisk attachment. Whip on high speed until thick - you are looking for the eggs to roughly double or triple in volume - approximately 3 minutes. Continuing to mix on high speed, slowly add the sugar in a steady stream. Whip for 2 minutes or until mixture is thick and ribbony. Now with a spatula fold in the lemon zest and vanilla (just until mixed).

    Sprinkle the flour on top of the egg batter, and gently fold in. Now fold in the butter mixture. Only stirring enough to bring everything together.

    Spoon the batter into the molds, filling each mold 2/3 -3/4 full. I use a small cup filled with batter to keep things clean and manageable, it is easier than using a spoon.

    Bake the madeleines for 12 - 14 minutes (7-10 minutes for smaller cookies), or until the edges of the madeleines are golden brown. Remove from oven and unmold immediately. Cool on racks and dust with powdered sugar.

    Makes 2 -3 dozen regular madeleines.

  8. I would cook my family version of baked spaghetti called goulash! Quick, easy, relatively cheap, and easy to prepare for a crowd.

    Misko Family Goulash:

    These are all estimates. We do not measure

    1 lb lean hamburger meat
    1 1/2 cans tomato sauce
    1 box vermicelli or thin spaghetti
    4 cups mozzarella cheese
    2 cups cheddar cheese
    10 oz sour cream (do not use low fat - it does not blend well)
    seasoning to taste

    1. Preheat oven to 375
    2. Brown hamburger meat and cook spaghetti. Drain.
    3. In a large bowl, combine meat, spaghetti, tomato sauce, sour cream, 2 cups mozzarella cheese, 1 cup cheddar cheese. If too thick, add more tomato sauce and sour cream. (you want this to be slighty runny)
    4. Pour mixture into a large baking dish. Add rest of the cheese to cover the top completey
    5. Bake until browned on top or about 35 minutes
    6. Let sit for about 10 minutes to set.

    This dish freezes really well.

  9. Since I am an Aussie, probably Kangaroo steaks done on the barbeque. With roasted vegetables followed by Lamingtons and Pavlova for desert. For those of you who have never tried kangaroo, It's quite nice. tastes similar to what you call ground beef.Although if cooked properly, call almost melt in your mouth. The Kangaroo's are specially farmed for the purpose of using for meat.

  16. Baked Potato bar with the potatoes baked in the crockpot or a large roaster. Veggies and dip, fruit, and crackers/cheese. We routinely have about 30 people over for our bible study with about 24 of them being children and I really enjoy cooking for big crowds!

  31. Probably nothing pasta because most large families get served that so often. I would grill out steak, hamburgers, chicken, shrimp vegetables and a special potato/onion/butter dish wrapped in foil that I make.

    For dessert: chocolate chip cakes and ice cream.

  32. i dont know for the dinner part but for dessert I would make this cake that my babysitter/granny makes, it runs in the family so now she is in heaven i might make it is called texas sheet cake heres the recipe

    Ingredients
    Cooking spray
    2 teaspoons all-purpose flour
    2 cups all-purpose flour (about 9 ounces)
    2 cups granulated sugar
    1 teaspoon baking soda
    1 teaspoon ground cinnamon
    1/4 teaspoon salt
    3/4 cup water
    1/2 cup butter Click to see savings
    1/2 cup unsweetened cocoa, divided
    1/2 cup low-fat buttermilk
    1 tablespoon vanilla extract, divided
    2 large eggs
    6 tablespoons butter
    1/3 cup fat-free milk
    3 cups powdered sugar
    1/4 cup chopped pecans, toasted

    Preparation
    Preheat oven to 375°.
    Coat a 13 x 9-inch pan with cooking spray, and dust with 2 teaspoons flour. Set aside.
    Lightly spoon 2 cups flour into dry measuring cups; level with a knife. Combine 2 cups flour and next 4 ingredients (through salt) in a large bowl, stirring well with a whisk. Combine 3/4 cup water, 1/2 cup butter, and 1/4 cup cocoa in a small saucepan; bring to a boil, stirring frequently. Add to flour mixture. Beat at medium speed with an electric mixer until well blended. Add buttermilk, 1 teaspoon vanilla, and eggs; beat well. Pour batter into the prepared pan. Bake at 375° for 22 minutes or until a wooden pick inserted in center comes out clean. Place on a wire rack.
    Combine 6 tablespoons butter, fat-free milk, and remaining 1/4 cup cocoa in a saucepan; bring to a boil, stirring constantly. Remove from heat. Gradually stir in powdered sugar and remaining 2 teaspoons vanilla. Spread over hot cake. Sprinkle cake with pecans. Cool completely on wire rack.

  44. Coming from a large family of 11kids :) I would serve chicken and dumplings,asparagus,and biscuits ,if any room for dessert yellow jello cake! Yellow cake mix, cook in rectangular dish when done cooking let it cool,then take a wooden spoon and poke holes in it,nextget your favorite flavor jello and add a little bit of water mix and pour over put in fridge for one hour cut serve and enjoy cool whip for topping

  51. Since I have a big family, there is 8 of us. I would probably make sphagetti with homemade meat sauce, a huge salad, garlic bread and brownies! It is easy, fast and cheap! Plus tasty!!

  52. Oh, I have already thought about this as I would LOVE to host them one day! For dinner, we would definitely have handmade pizzas! I would make up all the pizza dough in advance, though. I am trying to remember how many pizzas their family eats in one setting? We eat just 2 full size ones. Anyways, so I know that I'd need to majorly add on to the recipe. We have a big kitchen and dining room so I'd ask all the youngest kids to come in and help chop up tons of toppings...whatev everyone likes. Then we would cook some inside in our ovens and take some outside to grill. Tasty and FUN!!

  60. Wow! That would be hard to decide, but I would likely make Sausage, Peppers, Onions, and Potato Bake. It is hearty and tastes wonderful!

    Sausage, Peppers, Onions, and Potato Bake


    Ingredients:
    2 teaspoons olive oil
    2 pounds Italian sausage links, cut into 2-inch pieces
    1/4 cup olive oil
    4 large potatoes, peeled and thickly sliced
    2 large green bell peppers, seeded and cut into wedges
    2 large red bell peppers, seeded and cut into wedges
    3 large onions, cut into wedges
    1/2 cup white wine
    1/2 cup chicken stock
    1 teaspoon Italian seasoning
    salt and pepper to taste



    Directions:
    Preheat oven to 400 degrees F (200 degrees C).
    Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish. Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil. Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish. Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
    Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

  63. Lots of roast meat ; Australian Lamb, Australian Beef, Australian Chicken with heaps of roast potato, roast pumkin, bean, gravy and corn too (because americans love corn).

  64. Two meals here, would depend if it was an indoor or outdoor meal. Both could be pricy - but for a once in a lifetime event...
    1. Salad and veggies/dip for starters, then a fondue meal (with little chunks of chicken, beef, and probably shrimp along with potatoes and other root vegetables). Each person cooks their own dinner, one or two pieces at a time in the pots on the table. Then, while the next piece is cooking, they dip or roll the just cooked one in a choice of sauces and toppings. Finish with desert fondue -- lots of chocolate based options but probably a couple of non-chocolate pots too. Fruits, brownies, marshmallow, and pound cake for dipping.

    2.A fun meal focused on the kids: Walking tacos made with taco meat or chili. Spoon meat into individual size bags of Fritos and add choice of tomatoes, lettuce, cheese, sour cream, avocado, and taco sauce to the bag. Would have some kind of fruit, maybe on skewers, or other easy to eat style. Dessert would be make your own fudge(choice of flavors). One chocolate recipe is:
    3 ounces cream cheese
    1 lb powdered sugar
    6 tablespoons hot cocoa mix or 1/2 cup cocoa
    2 tablespoons butter
    2 sandwich ziploc bags per person (they break!)
    Divide ingredients into 6 portions and double bag. Squish by hand until mixed.
    Would probably also do kick the can ice cream where each can makes about 2 servings. You guessed it: by kicking or rolling the cans. The inside one has the food contents the larger outside one the ice and rock salt. Would do several flavors here too.

  67. I would make Korean egg rice. Ingredients are egg,rice,olive oil,soy sauce,butter,seaseme seeds, rice. First you put the olive oil in a pan. Third you crack the egg in a pan. Fourth you put the butter,rice,and the egg into a bowl. 5th mix the ingredients. 6th eat enjoy.

  70. The Duggars are some of the most precious people we know! When they come to our house they usually bring the pizza - 18 to be exact! They are exactly what you see on TV; kind, caring, selfless, thoughtful and VERY organized! Of course they don't claim to be perfect - NO ONE is! I've never known Michelle to come or go anywhere empty handed - she is usually thinking of how to bless others even if they are the dinner guest! GO DUGGARS! Cindy

  72. BEST MAC AND CHEESE IN TOWN!!!

    INGREDIENTS:
    1(8 ounce)package elbow macaroni
    1(8 ounce)package shredded sharp Cheddar cheese
    1(12 ounce)container small curd cottage cheese
    1(8 ounce)container sour cream
    1/4 cup grated parmesan cheese
    salt and pepper to taste
    1 cup dry bread crumbs
    1/4 cup melted butter

    DIRECTIONS:
    1.Preheat oven to 350 degrees F(175 degrees C)bring a large pot of lightly salted water to a boil,add pasta,and cook until done;drain.

    2.In 9x13 inch baking dish,stir together macaroni,shredded Cheddar cheese,salt and pepper.In a small boil,mix together bread crumbs and melted butter.Sprinkle topping over macaroni mixture.

    3.Bake 30 to 35 minutes,or until top is golden.

    You would have to do 10x for your size family!!! lol
    And for the sides I would do green beans,and corn off the cob.And for dessert I would make homemade brownies and ice cream. Hope you all enjoy!!!

  73. Sweet & Pungent Chicken!

    serves 6

    Start your rice!

    Heat the pan for chicken(about 3-4breasts cut up into bite size pieces) add olive oil, then add chicken. Saute til browned then turn down. put lid on and simmer on low medium heat.

    in small pan, mix together 2T corn starch and 1/2 cup brown sugar, add 1/3 cup vinegar, 2T soy sauce, 6T pineapple juice. Place on medium heat til boiling turn down and simmer.

    Stir fry vegetables.

    Serv either layered with sauce on top or add sauce to chicken and serve over rice with Veg on the side. Pineapple can also be added s desired

    Recipe can be multiplied easily

    ...a cake with fêta cheese, persil-basilic-ciboulette
    Or a huge "raclette" or "tartiflette", the meals we eat in the Alps mountains in winter...

  75. When it's summer, grill a ton of veggie kabobs (mushrooms, tomatoes, zucchini, chicken, onions, etc.)
    You can marinate them beforehand, if you desire.

    my family of 4 (I'm the oldest) makes them all the time! I hope your family enjoys them! : )

  77. If the Duggars came I would go all out because they seem to like to cook and bake and so do I. Plus when you are cooking for 21 or more you probably do not get to do labor intensive things too often. So I would make homemade pasta and raviolis with several sauces, a nice big salad (hopefully from my garden but I am not sure I would have enough), some homemade focaccia, and then dessert would be a huge three tier cake with something fun about them that I would make with my kids.

    When are they coming? I'll need to start planning! We'd love to have them come to our home.

  78. Filipino Food...THE WAY MY MOTHER IN LAW WOULD PREPARE IT. But here is one of the easiest Filipino recipe ever... Chicken Adobo: Chicken wings,or I buy a bag of chicken party wings like what you use to make hot wings. Garlic....how ever much you like...minced. Soy Sauce and a squirt lemon juice for a bit of pazzaz. You can cook it on the stove or in the oven, mix all ingrediants together, with enough soy sauce to lightly coat the chicken...in the oven 350, on the stove, medium heat, serve with rice.

  80. Stuffed shells...with cheesy garlic bread! In a family of 10 this one that all of us LOVE. For enough for us we use 2 boxes giant shells, 3 rolls of breakfast sausage (mild), 3 packages of cream cheese, (8 oz.), 3 jars of speghetti sauce, shredded colby jack cheese. Boil water then cook shells as you would any other pasta, while waiting for those to cook you cook the sausage and then drain, put back in the pan and put in the cream cheese, mix and ensure the cream cheese is fully melted and coated the sausage. Drain the pasta and stuff each shell (we use a cookie dough scoop) witht he sausage/cream cheese mixture and put them in a single layer in a cake pan. (we use a double cake pan) cover the stuffed shells in speghetti sauce (ragu 6 cheese is the bomb) and cover that with shredded colby jack cheese. Cover the pan with aluminum foil and bake on 375 until the cheese is melted! Delish!!

    Dinner for the Duggars I'd be looking for something they didn't normally eat; roast kangaroo with rosemary sauce would be good, damper rolls, fresh steamed asparagus, definately pavlova for dessert.

  83. I would serve them healthy things like boneless chicken breasts or and a tossed salad. If I am tight with money, it would be a green bean casserole, mashed potatoes, and a bunch of biscuits. In the winter, I would serve a big pot of vegetable soup. For dessert, a few chocolate pies or large container of low-fat puddings and some fruits.

    Cook 3 cups of Brown rice,

    Brown 3 lbs of hamburger.

    Add together in skillet with 1 can chili beans, 1 kidney, and 2 diced tomatoes. Add in cumin, chili powder and cayenne pepper. Simmer together with 1 cup water for 20 minutes, serve with tortilla chips, sour cream, and cheese. :)

  87. I would make something that they would enjoy. Maybe one of their recipes, something I know they would eat. My house is large, but I don't think it's large enough for 21 plus 9 people!=)

  88. My delicious chicken enchiladas with my uncles recipe of chicken beef gravy. mex rice recipe. My sister is good at the homemade bean recipe. I would show them how to make good southern snacks. Stuffed celery. smoked chicken and sausage. Potato Salad. My famous chicken salad and deviled egg recipe. I have one child so this would be a challenge for me. To cook for so many people.Lol

  90. Well I am Southern so I would say country style steak with mash potatoes and broc/col with cheese sauce and green beans along with fresh made dinner rolls for dinner and brownie a la mode or apple harvest pound cake for dessert . If your southern you know how to cook for a crowd.

  91. I would probably have a couple of big turkeys, with all of the delicious side dishes that accompany it. I would also fix a variety of pies, including several pumpkin ones. One thing I would do, is use real plates and silverware. I cannot believe they don't have some of those little plastic plates themselves, choosing to use paper for every snack and meal. I know it is easier, but it seems like poor stewardship with God's creation to me.

  93. hmmmmmmmm. I think I would make Vegan Mac-n-chease, super duper crescent rolls, and buttered peas which are made with yeast flakes and olive oil, not real butter. And I would have crunchy peanut butter, vegan, carob brownies! yum, yum, yum, yum!!!!
