Very Duggar Recipe: Oatmeal Pancakes

There's nothing better than fresh pancakes on a sunny morning. What kind of pancakes do the Duggars like? Oatmeal! 

Oatmeal Pancakes

Ingredients: 
  • 2 c. quick oats
  • 1/2 t. baking soda
  • 2 1/2 c. buttermilk
  • 1 c. flour 
  • 2 t. baking powder
  • 1 t. salt
  • 1 T. sugar
  • 1/3 c. salad oil
  • 2 eggs, beaten
Directions:
  1. Combine oats, soda, buttermilk. Let stand 5 min. 
  2. In another bowl combine flour, baking powder, salt, & sugar. 
  3. Combine oat mixture, oil, & eggs. 
  4. Add dry ingredients & stir till blended. 
  5. Cook on lightly greased griddle or skillet.
*Yield 14-16 Pancakes.

Variations/Suggestions:
*Substitute buttermilk for 2 1/2 cups milk or 2 1/4 cups milk and 2 tablespoons white vinegar or lemon juice.
*Add more or less salt based on personal preference.
*Use any kind of oil.
*This recipe is very tasty and healthy, too! At our breakfast table, everyone likes a different topping. Some suggestions are yogurt, applesauce, syrup, peanut butter, jelly and honey.

    1. I too love this recipe, but the batter is so thick, I have trouble spreading it in the pan. How do you make it more spreadable?

    2. I use a tablespoon that I have dampened with water. Then I use the back side of the spoon to keep moving the mixture in a circular motion on the outer edges, to make the size I want. works for me, hope it does for you

  3. I like to cook a large batch & then freeze the individual pancakes. Then later I thaw only the number of pancakes I want and toast them in the toaster. Makes for a quick breakfast or anytime snack with a favorite topping.

  4. These are so yummy! I was looking for a healthy alternative to the boxed mix that I used for my children. I will never go back to boxed mix again! Definitely worth the little extra time to make.

  7. The recipe sounded amazing until I got to the part with the vinegar....can someone tell me what the point of that would be? Would that not curdle the mixture?

    1. If you don't have buttermilk, but want that, you make your own using the milk and adding the vinegar. If you want to use milk, or buttermilk and you have some, then skip the vinegar part

    Hi Michelle,

    That's just a substitution for buttermilk (2 1/4 cups milk and 2 tablespoons white vinegar or lemon juice). We have used it plenty of times, and it doesn't curdle the mixture:)

  9. How much almond milk would I add to this recipe? I have a daughter that can not have milk products and I would love to make these for the whole family.

    1. You can make a non-dairy buttermilk by combining 2 1/4 cups almond milk with 2 tbsp vinegar or lemon juice.

  10. I am interested in making these pancakes for my family. Unfortunately, my daughter is allergic to milk products or anything with casein in it. HOw much of a substitution milk can I use to make these?

    Salad oil is a generic term that refers to any type of light flavored oil, such as vegetable, canola, corn, or peanut. We usually use canola oil for this recipe.

  22. The pancakes are dee-lish, but since the batter is so stiff, it is very hard to spread out in the skillet. Is there a remedy for this?
